As a child and young adult I loved cheese and cheese spreads! All sorts but especially the kind that was filled with herbs. As I transitioned to a dairy free diet I found myself really missing those herby cheese spreads at gatherings and special occasions. So I created this quick and nutrient dense avocado dip that has a similar flavor profile and is packed with good fats. Enjoy this with crudités or grain free crackers.
2 large ripe avocados
Zest from one medium size lemon
5 tablespoons fresh lemon juice
1 clove of fresh garlic minced
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh dill
1 1/2 tablespoons finely chopped fresh thyme
1 tablespoon finely chopped fresh rosemary
¼ teaspoon dried culinary lavender
Fine sea salt to taste
Using a small mixing bowl, scoop out the avocados into the bowl and gently mash. Add the fresh lemon juice, zest, garlic, basil, dill, thyme, rosemary lavender and mix gently till well combined. Next, add fine sea salt to taste. Serve immediately or cover tightly for up to 3 hours at room temperature. Beautifully garnished with fresh lemon zest and lavender.
