Roasted Wedge Purple Cabbage

Nothing beats cozy.  Pull out your best table wear for that Roasted Wedge Purple Cabbage because you want friends over.  An afternoon at home where everyone naturally gravitates around the table is what’s needed.  Think card games and an ultra late night with some quirky bottles of red wine.  We can easily all agree that roasted purple cabbage is totally underrated. 

Serve out of the oven with your favorite garlic olive oil or a flavorful herbed aioli for dipping.  Entertaining doesn’t have to be expensive while still looking irresistible 

1 large head purple cabbage –wedge into small slices

coconut or olive oil

smoked fine sea salt ( I like maldon)

Pre heat oven to 415 degrees and line one large sheet pan with parchment paper

Slice the purple cabbage into small wedge slices.  Gently place into a large mixing bowl and drizzle with your preferred cooking fat.  Toss well making sure to evenly coat the cabbage. 

Next, lay flat on your sheet pan fitted with parchment paper.  Season with fine sea salt to taste and place into the oven.  Roast for 20-25 minutes till golden and make sure not to burn.
